What are some good software for music creation?

I am wondering if there is some type of software out there than can digitally recreate the sounds of various instruments and allow me to create my own songs. I have seen software that comes with samples, but what I'm really looking for is something more advanced than that. I want to conduct a symphony or lay down tracks with guitars, drums and maybe record my own vocals over them and burn them onto a CD. Does this type of software exist? Can you point me in the right direction? I hope you can respomd to this E-mail, as I don't get a chance to read the paper everyday.
