How do I handle email with an attachment?

I was told on how to handle email with an attachment. Neither my wife nor I can recall any information on how to do this. We would click "open it" and "Send it to disk". That's where we stop. Can you please outline the steps that we should follow to minimize the risk of a virus infection?
