How can I stop things from going into my documents?

eyery time I open someyhing up it goe's into the documents folder in my start up tab how do I stop things from going there

Well this is something that am not that familiar with, but I have seen my cousin handle something like this before, what you can do is you can keep a lock on your document and by doing that would be keeping it apart when you go into starting your tab, you could keep the my pictures open, thats what ive seen him do.
